Here is a very easy and healthy coconut banana pancakes recipe to whip up on a Sunday morning. These pancakes are fluffy and full of protein. Along with the combined EO Superfood compote, this meal is a nutrient hit!

With these pancakes, you can also change up the flour to suit your preference, noting that you will need to reduce the eggs depending on the flour you use as coconut flour absorbs a lot more liquid than any other flour. I would suggest trying wholemeal spelt (if you are not gluten free) or a rice flour or even oat flour.
You can also increase the bananas, as this will make the pancakes much more moist and also enhance the banana flavour.
Serving your coconut banana pancakes with the berry compote also gives a lovely texture and added sweetness. If you prefer, you can swap the raspberries to blueberries or even blackberries, or a blend of all 3 berries! The fruit combinations are endless.
